It doesn’t use any additives, baking mixtures or chemicals, which means everything is as organic as can be. Scarlet’s was founded out of a deep love for pâtisserie and started with a small corner shop in Belgium in 1886, moving to Germany some 80 years later. In partnership with a German bakery, the company became a bakery and pâtisserie with real and natural sourdough breads, natural buns, and pastries available. Today, it is known for its bakery goods that are fresh and authentic. With many clients originating from Germany and Europe, yet residing in the United Arab Emirates, Scarlet’s also enjoys guests of all nationalities and loves to see the excitement that its customers get while entering the bakery for the very first time. Upon entering the bakery, the delicious smell immediately hits you – the sweet scent of freshly baked goods. On peering through the window, you may even catch a glimpse of the talented bakers creating the original German sourdough breads or seeing how they bring the freshly baked baguettes out of the oven. “When it comes to our values, we can for sure say that the most important value is using only real ingredients,” explains the bakery’s owner, Zoea Scarlet. “We want to point out, that we have a strict nonadditive and non-preservative policy and use only natural ingredients.” Making a point of only using homemade real vanilla sugar, real butter, farm fresh eggs, fresh fruits and vegetables, hormone-free chicken, and the best raw materials available, Scarlet’s strives to ensure the best quality for its customers. But Scarlet’s is different to your standard bakery, in more ways than one. It combines the traditional bakery with a bistro concept, where customers can choose from a range of dishes including salads, schnitzel, pizza, and pasta, plus an array of tasty desserts. Thus, it has become renowned for its homemade and freshly prepared meals, as well as its baked goods. “As we are producing all our bakery items in our branches without being dependant on baking mixtures or other recipes apart from our own, this means we only serve fresh bakery goods to our customers,” Zoea states, telling us of the bakery’s unique selling points and how these distinguish it from competitors. “We are transparent. Customers can see our bakers while baking through a window and see how products come out of the oven directly into our display for sale. We don’t keep bakery goods overnight and give our customers only the best and freshest quality every single day. “Another key point is of course our specialisation in German bakery products. This is a niche on the market and attract Germans and Europeans. We bring Germans a bit of home to Dubai and that’s what makes us feel very glad.” Behind every business, there is a human element and this does not differ when it comes to Scarlet’s. Whilst the company has a clear hierarchy it is also a family-owned business and managing the team is likened to managing a big family. “We see the team as voice between us and our customers,” says Zoea. “We invest many hours in training and talk to each employee personally to keep a constant communication between each other. We also know most customers by name and love the personal interaction with them that we are able to provide.” The recruitment process is very important at Scarlet’s as it is not looking for new employees – instead it is looking for new family members. It is very important, therefore, whilst looking for employees to find motivation also to look at the human and character itself. “The spirit is much better when the team members fit in with each other and identify with the company values,” Zoea tells us. “This is why the decision process is not only based on the qualifications – the person itself is more important to us.” Currently, Dubai is fast-growing compared to other regions and the overall standard in the F&B industry is very high. Customers are spending more money on food items, especially in restaurants and for quality products, particularly post-pandemic. There are many positive elements to being based in such a thriving and vibrant city for Scarlet’s, including the availability of motivated employees looking for active roles within the community, a high focus on quality and safety in the workplace, and good business structures for new companies. “We see the key advantages in the market demand itself,” Zoea elaborates. “Because Dubai is growing in all fields, we see a lot of potential for traditional manufacturing concepts, such as traditional bakeries, restaurants, and a lot more. Big chains are well established and are a big part of the market – because of this and to compensate the market itself there is also a huge demand for niche players with a specialisation.” Recently, thanks to its dedication and commitment to ensuring that local residents are catered for, and for helping to fly the flag for small businesses, Scarlet’s was recognised in the UAE Business Awards 2023 and crowned with the prestigious title of Best Bakery & Patisserie 2023 – Dubai. Whilst this accolade proves the success and popularity of the bakery to some extent, Zoea goes on to remind us that there is more than a business sense behind the bakery’s ethos… there is a deep-rooted passion as well as a traditional legacy to uphold.
